Easter feels like the last big holiday before the summer season hits, the last holiday in which you can shamelessly enjoy sweets and a full-course meal guilt free.
This year, while you are dying Easter eggs and packing Easter baskets, enjoy this sweet recipe. Inspired by one of my favorite Easter candy treats, this week we are making Mini Eggs cookie sandwiches.
Simplicity is key. This recipe is remarkably simple and tastes amazing.
For the cookies, you will need two boxes of devil’s food cake mix, one cup of canola oil and four large eggs (room temperature). For the filling, eight ounces of cream cheese (softened), 1/4 cup of butter (softened), 2.5 cups of icing sugar and one tablespoon of vanilla extract. Of course, the most important part is three cups of Cadbury Mini Eggs. Blend the Mini Eggs in a blender or food processor on pulse setting to break them up.
In a mixing bowl, combine the cake mix, eggs and oil. Mix until well blended. Roll into one-inch balls. Before placing the balls onto a cookie sheet, dip the top of the dough ball into the shattered Mini Eggs. Place two inches apart on an ungreased cookie sheet.
Bake at 350 F for 10-12 minutes. Use the toothpick method to check the inside of the cookies before removing from the oven. Remove from the oven and let it sit on the sheets for five-to-10 minutes to set before transferring over to wire cooling racks.
In a bowl, beat the cream cheese and butter until fluffy. Beat in the icing sugar and vanilla until smooth. You can use a piping bag or spatula to disperse the filling into the cookies.
Once the cookies have cooled, take a cookie and apply icing to its bottom side. Take another cookie and place on the top of the iced cookie, gently sandwiching them together.
The end result? Moist cookies sandwiching a velvety cream cheese frosting with crunchy Mini Eggs chunks on the top and bottom of the sandwich.
